Ingredients - 1 Tablespoon canola oil
- 2 beaten eggs
- 3 1/2 cups brown rice, cooked
- 1 cup chicken breast, cooked and chopped
- 1 cup mixed vegetables (such as peas, carrots and green beans), cooked and chopped
- 1/4 cup chopped water chestnuts
- 2 sliced green onions
Instructions - Heat pan. Add 1 teaspoon of oil. Add eggs and scramble. Remove cooked eggs and set aside.
- Add the rest of oil (2 teaspoons) to pan. Stir fry rice, breaking up lumps by pressing rice against pan.
- Add chicken and vegetables. Stir-fry until heated.
- Add green onions, water chestnuts and reserved eggs. Serve hot.
- Serve with lite soy sauce and hot pepper sauce if desired.
