Ingredients
  • 1 pound ground beef, 93% lean
  • 2 bunches spinach - washed and cut into pieces
  • 1/2 small finely chopped onion
  • 2 pressed garlic cloves
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 3 cups cooked brown rice

Instructions
  1. Preheat frying pan (no oil). Combine all ingredients in a large mixing bowl, mix well.
  2. Form mixture into small balls. Place in frying pan and flatten like tortillas using a spatula.
  3. Cook both sides over medium heat until cooked through. Serve over brown rice.
