Ingredients - 1 pound ground beef, 93% lean
- 2 bunches spinach - washed and cut into pieces
- 1/2 small finely chopped onion
- 2 pressed garlic cloves
- 1/2 teaspoon salt
- Black pepper to taste
- 3 cups cooked brown rice
Instructions - Preheat frying pan (no oil). Combine all ingredients in a large mixing bowl, mix well.
- Form mixture into small balls. Place in frying pan and flatten like tortillas using a spatula.
- Cook both sides over medium heat until cooked through. Serve over brown rice.
