Ingredients - 2 tsp canola oil
- 1 1/2 cup chopped onion
- 1 garlic clove, minced
- 1/2 tsp ginger
- 2 tsp curry powder
- 15 1/2 oz can no added salt tomatoes
- 1/2 tsp salt
- 1/4 tsp rosemary
- 1/2 tsp thyme
- 15 oz can black beans, rinsed and drained
- 15 oz can garbanzo beans, rinsed and drained
- 1/3 cup chopped fresh parsley
- 1 Tbsp lemon juice
Instructions - Heat oil in skillet over medium heat. Add onions and garlic and sauté until tender.
- Add ginger, curry powder, and tomatoes stirring until mixture is slightly thicken. Add salt, rosemary, thyme, and beans.
- Stir well and simmer for 5 minutes stirring occasionally. Before serving add parsley and lemon juice.
