Ingredients - 2 corn tortillas
- ¼ C fat free refried beans
- ¼ cup light cheese, shredded
- 2 C romaine or dark leaf lettuce
- ½ C bay shrimp
- Lime juice (fresh) and crushed red pepper to taste
- Garnish ideas: salsa, green onion, avocado, non-fat or light sour cream
Instructions - Heat tortillas in broiler or in toaster oven until crisp.
- Drizzle lime juice over shrimp and add red pepper to taste. Heat shrimp in a small non-stick frying pan until cooked through, about 3-5 minutes.
- Spread tortillas with beans and sprinkle with cheese.
- Top with lettuce and shrimp. Garnish with salsa, green onion and a small amount of avocado and non-fat or light sour cream if desired.
