Ingredients
  • 2 corn tortillas
  • ¼ C fat free refried beans
  • ¼ cup light cheese, shredded
  • 2 C romaine or dark leaf lettuce
  • ½ C bay shrimp
  • Lime juice (fresh) and crushed red pepper to taste
  • Garnish ideas: salsa, green onion, avocado, non-fat or light sour cream

Instructions
  1. Heat tortillas in broiler or in toaster oven until crisp.
  2. Drizzle lime juice over shrimp and add red pepper to taste. Heat shrimp in a small non-stick frying pan until cooked through, about 3-5 minutes.
  3. Spread tortillas with beans and sprinkle with cheese.
  4. Top with lettuce and shrimp. Garnish with salsa, green onion and a small amount of avocado and non-fat or light sour cream if desired.
